carrots beets and onions....

Is anyone else thinking borscht? The carrots are ready to come out (even if a bit short) I've got what appear to be a few decent sized beets, and the onion tops are starting to lay down. If anyone has some recipes (the more simple the better while I know my way around a kitchen, I'm not exactly the Iron Chef,) and preferably vegetarian.

While you're at it I'll gladly entertain your favorite potato salad recipe's too. Its going to be new potato time and I have a picnic to go to on the 27th.

I only make potato salad one way because most of us don't care for mayonnaise.

boil potatoes with skins on (unless skins are tough) until fork tender but not falling apart or you'll end up with paste. If the potatoes are large, quarter them but you're not aiming for bite size yet, they're going to sort of fall apart in the mixing process.

Drain potatoes and dump into large bowl. Add olive oil and more vinegar than you think you need. I'm sorry, I don't seem to measure anything these days. Add some crushed garlic, a boat load of cilantro and maybe some parsely, chopped onion and scallions, salt, pepper and mix. I tend to eat a good bit of it hot and it's also great in the fying pan for breakfast.

Man, you are harvesting my winter crops in mid summer. I can only imagine what a carrot would look like right now in my garden. Most likely dead. Hot, and very dead.

these were all started early spring, and we have had relatively mild temps so far, nothing above 84 if I recall.

thanks for the recipe alecto, I was hoping to see something without mayo actually.
